I haven’t seen this much encoding formats all in one place yet. Here’s a program that allows converting video to almost any format. Just look at the list:

It does convert video to iPhone and iPod Touch format.
The program is completely free. The author welcomes donations though, but they are not required. I wasn’t greedy and said my thanks this way.
